How to cook idli Sambar in telugu | idly sambar recipe.
Ingredients for idly:
Urad dal – 1 cup
Idly rava – 2 cups
Pinch of baking soda
Salt to taste (1 teaspoon)
Oil for greasing
Ingredients for sambar:
Toor dal – ½ cup
Tamarind pulp - 1/2 cup
Oil - 1/4 Cup
Tomato (Chopped) – 2
Green Chilli (chopped) slit – 4
Carrot (chopped) – 1
Onion ( Chopped ) - 1 cup
Fresh fenugreek leaves (cleaned and chopped) - 1/4 cup
Curry leaves - 3 sprigs
Sambar powder – 2 table spoons
Jaggery – 1 teaspoon
Red chilli powder - 1 teaspoon
Salt to taste ( 2 teaspoons )
Cumin seeds – ½ teaspoon
Mustard seeds – ½ teaspoon
Turmeric powder - 1/2 teaspoon
Method:
Soak 1 cup of Urad dal, 2 cups of idly rava for 2 hours.
Take a mix jar, add urad dal, pour ¼ cup of water and grind well.
Add the urad dal batter into the soaked idly rava and mix well, add pinch of baking soda, salt to taste ( 1 teaspoon) and mix well, close the lid and ferment for over night.
Next day after fermentation gently mix the batter till it become smooth and keep aside.
Grease idli plates with oil, pour the 3/4 of batter in each mold.
place a idly cooker on the flame and pour 2 cups of water, place the idly plate in the cooker, cook for 10 to 15 minutes in medium flame.
Now we are making sambar for idlies, Place a pan on the flame, add tamarind pulp, salt, sambar powder, turmeric powder, tomato, green chilli, onion, carrot and fresh methi leaves.
pour 3 cups of water, add red chilli powder and stir well.
Add Curry leaves and bring it to boil for 2 to 3 minutes.
Add 3 tablespoons of cooked toor dal, stir well, Add Jaggery or salt as your like, Salt to taste, stir well, bring it to boil for 5 minutes and turn off the flame.
Heat a small pan and add tablespoon of oil, Add cumin and mustard seeds, cook till the cumin, mustard seeds become light brown and splutter.
switch off the flame and dunk instantly into the cooked sambar. Stir and switch off the flame.
Now takeout the idlies into a serving plate, pour the sambar on the idlies.
Idly sambar is ready, serve hot immediately.
